Ingredients

  • 1 cup unsalted butter softened to room temperature
  • 2 cups packed light brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 3 cups all-purpose flour measured and leveled
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/4 teaspoons ground cardamom
  • 2 cups chunky applesauce homemade or store-bought
  • Confectioners' sugar optional, for dusting

Instructions

  • Preheat the Oven
  • Set your oven to 350°F (175°C) and allow it to fully preheat.
  • Prepare the Pan
  • Generously coat a 9-inch tube pan with nonstick cooking spray, ensuring all crevices are covered.
  • Mix Dry Ingredients
  • In a large mixing bowl, whisk together the flour, baking soda, salt, cinnamon, and cardamom until evenly combined. Set aside.
  • Cream Butter and Sugar
  • In a separate large bowl, beat the softened butter, light brown sugar, and honey together using an electric hand mixer until light and fluffy.
  • Incorporate the Eggs
  • Add the eggs to the butter mixture one at a time, beating well after each addition to ensure a smooth and homogenous blend.
  • Combine Dry and Wet Mixtures
  • With the mixer on low speed, gradually incorporate the flour mixture into the butter mixture, blending just until no streaks of flour remain.
  • Add Applesauce
  • Beat in the applesauce until it is fully integrated, creating a smooth, luscious batter.
  • Pour Batter into Pan
  • Transfer the batter into the prepared tube pan, using a spatula to level the top.
  • Bake the Cake
  • Place the pan in the oven and bake for 50 minutes to 1 hour, or until a toothpick inserted into the center of the cake comes out with only a few moist crumbs attached.
  • Initial Cooling
  • Let the cake cool in the pan on a wire rack for about 10 minutes.
  • Remove the Cake
  • Carefully turn the pan over onto a cutting board or baking sheet, then lift the pan to release the cake onto the wire rack, positioning it top-side up.
  • Cool Completely
  • Allow the cake to cool completely on the wire rack before finishing.
  • Finish and Serve
  • Once cooled, dust the cake with confectioners' sugar, slice it into portions, and serve to enjoy its warm, spiced flavors.
