Ingredients

  • 1 package Duncan Hines Signature Pineapple Cake Mix
  • 4 large eggs
  • 1 can 20 oz. pineapple slices, drained
  • ½ cup 1 stick butter or margarine, melted
  • 1 cup firmly packed light brown sugar
  • 1 package 3.4 oz. vanilla instant pudding and pie filling
  • ½ cup oil
  • 1 cup of water or coconut milk
  • 4 Maraschino cherries halved (optional)

Topping:

  • 1 package frosting of your choice
  • Coconut flakes for garnish

Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C) to warm up while you prepare the cake.
  • Prepare the Bundt Pan: Pour the melted butter into the bottom of a Bundt pan and sprinkle the brown sugar evenly over the butter, creating a base layer of sweetness.
  • Arrange the Fruit: Place the drained pineapple slices over the brown sugar mixture, positioning them evenly. If using cherries, place a cherry half in the center of each pineapple slice. Set the pan aside.
  • Mix the Batter: In a large mixing bowl, combine the pineapple cake mix, instant pudding mix, eggs, water (or coconut milk), and oil. Beat the mixture with an electric mixer on medium speed for about 2 minutes until smooth and well-blended.
  • Pour and Bake: Carefully pour the batter over the arranged fruit in the pan, spreading it evenly. Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean, indicating the cake is fully baked.
  • Cool and Invert: Allow the cake to cool completely in the pan on a wire rack. Once cooled, invert the cake onto a serving plate to reveal the pineapple and cherry topping.
  • Frost and Garnish: In a microwave-safe bowl, heat the frosting on high for 10-15 seconds until slightly melted and smooth. Stir, then drizzle the frosting over the cake, letting it cascade down the sides. Finish by sprinkling with coconut flakes, or add chopped walnuts if desired for an extra touch of texture and flavor.
